Dishoom’s Chandra Bose Sour is billed as a “volatile combination of Indian and Japanese whiskies”, splashed with plum bitters and topped with egg-white foam.

The (Kill) Devil’s Share sounds rather threatening. Certainly it is intoxicating: the menu describes it the “missing link between a whiskey sour and a tiki drink: cherry Heering, Woodford Reserve rye, El Dor Ado 12-year old rum, crème de banane, ginger and maple syrup.
