Young British Foodie: Sunaina Sethi

Who: Sunaina Sethi, 24

Lives: north London

What she does: Manager and Sommelier at Trishna restaurant, Marylebone village. “My job is currently a combination of managing the front of house as well as the wines. There is always a lot going on from dealing with all the back office stuff – staff management, rotas, wine stock management and ordering - to the wine. This involves keeping the list updated, changing it where necessary and doing tastings. We also do a staff tasting about once a week - there are between six and 10 staff on front of house and they all need to be trained. Finally, there is food and wine matching to be done. I want to show people that you don’t have to have a beer with Indian food - wine goes very nicely with it.”

Signature skill: “The direction I’m generally trying to take the wine list in is by bringing in things that people wouldn’t necessarily have heard of from countries or areas that they wouldn’t necessarily know about. I like getting them to try things out of their comfort zones.”

How she did it: Studied management and German at university, spent a year working in banking in Germany then came back to London thinking about pursuing a career in the city. “I soon realised within a couple of months that this was what I wanted to do. And here I am a couple of years later…”

Why she does it: “I love how dynamic it is and being able to pass on everything that I know to customers and to staff. I’m a people person and I love having that constant contact with people as that is something that I felt was missing in what I was doing before. There is never a dull moment, either, and there are different challenges all the time.”
