Takeaway fusion: Researchers found people are fusing cuisines

Fusion food has become so commonplace in the capital that Londoners are impatiently waiting for the next twist on tradition.

Rather than wait for the next hybrid trend, foodies are already mixing it up themselves by combining elements of different takeaway options.

Researchers found people were mostly mixing and matching Chinese and Indian cuisines, dubbed “Chindian”, as well as making a chicken katsu burger, which features the curry inside a burger bun, mac and cheese “balls” – cheesy pasta coated in breadcrumbs – and southern fried duck, a cross between southern fried chicken and Chinese favourite, Peking duck pancakes.

The research by JustEat, conducted with Oxford Univeristy academics, unearthed the growing trend and proved people want even simple pizzas souped up, with “dessert pizzas”, such as chocolate-covered thin-crust bases offered by American restaurant Max Brenner, nearing the top of the list.

Professor Charles Spence, Professor of Experimental Psychology at Oxford University, said: “As a city, London has been receptive to new ideas and flavours for centuries. Most food we eat today is actually a fusion of cuisines. Our very own Fish and Chips for example is mix of Jewish, French and Belgian cuisines.

“As the world gets ever more closely linked, so do the cuisines - and so inevitably we are going to see more hybrid dishes such as a fusion of Indian and Chinese – “Chindian”, it’s a really exciting part of modern culture.“

The delivery service is launching a three-day street food festival, Just Eat Food Fest: Fantasy Fusions, in Shoreditch from July 20 -22 to give everyone a chance to sample the phenomenon.
