London style hotspot: Stax, Kingly Court, W1
The look: An open-front bright red diner with floor to ceiling walls clad in retro adverts and black chalk boards emblazoned with everything on offer. A large bar made of reclaimed timber sits in front of a collage of multi-coloured vinyls and drums hang from the ceiling alongside tin can lamp shades. Yellow stools, food encased in paper and tables laden with bottles of ketchup and mustard create a 1960s American dining experience.
Who’s behind it? Acclaimed chef and owner of Bea’s of Bloomsbury and Maltby diner, Bea Vo is the mastermind behind this Grease style diner.
What should I try? The Big Stax – a burger with spicy comeback sauce, maple glazed beef bacon, caramelised onions and a choice of cheese. If you’re feeling peckish make it a double stax or if you’re just darn greedy make it a triple. We also love The Chickadee – buttermilk marinated fried chicken breast on Balthazar brioche. If you still have room finish with The Dough-bro – a fudge brownie doughnut with butterscotch sauce and French vanilla ice-cream.
Go there if: You want a slice of Deep South American dining in a buzzing setting.
